Healthy Pumpkin Mousse is an easy, quick, (15) minute, no-cooking recipe for a dessert or treat. Ingredients include: Canned pumpkin, instant pudding mix, pumpkin pie spice and whipped topping. 3 cups cold skim milk
2 (1.5 oz) boxes fat-free sugar-free
vanilla instant pudding mix

1 (15 oz) can pumpkin
1 tsp pumpkin pie spice (adjust to taste)
1 cup thawed, sugar-free or light whipped topping


1. Beat milk and pudding mix in a medium-size bowl with whisk 2 minutes. Blend in pumpkin and spice.

2. Stir in the whipped topping.

3. Spoon pudding mixture evenly, (1/2 cup) into each of 12 wine glasses or other stemmed glasses. Refrigerate for 1 hour before serving.

Yield: 12 servings.
Serving Size: 1/2 cup per serving.
