Healthy Pumpkin Mousse
Healthy Pumpkin Mousse is an, easy, quick, no-cook recipe for a dessert or treat. It is also a low calories, low fat, low sugars, low cholesterol, low sodium, low carbohydrates, heart-healthy, diabetic-friendly and (2 SmartPoints) recipe. 3 cups cold skim milk
2 (1.5 oz) boxes fat-free sugar-free
vanilla instant pudding mix
1 (15 oz) can pumpkin
1 tsp pumpkin pie spice (adjust to taste)
1 cup thawed, sugar-free or light whipped topping
1. Beat milk and pudding mix in a medium-size bowl with whisk 2 minutes. Blend in pumpkin and spice.
2. Stir in the whipped topping.
3. Spoon pudding mixture evenly, (1/2 cup) into each of 12 wine glasses or other stemmed glasses. Refrigerate for 1 hour before serving.
Yield: 12 servings.
