Healthy Salmon Patties
Healthy Salmon Patties is an easy and delicious recipe that takes about (20) minutes to prepare and (10) minutes of refrigeration. Canned salmon, green onions, Mayonnaise, Mozzarella cheese and a packaged stuffing mix are combined together and cooked in a skillet for a delicious seafood entree. This is also a low calories, low fat, low saturated fat, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (7 SmartPoints), (7 PointsPlus) recipe. Makes: (6) servings, (2) Patties per serving. Healthy Salmon Patties will be loved by all of your family friends and guests.
1 (14.7 oz) can salmon, drained,
skin and bones discarded
1 pkg. (6 oz) Low-sodium stuffing mix for chicken
1 cup shredded 2% Mozzarella cheese
3/4 cup water
1/3 cup reduced-fat Mayonnaise
2 green onions, sliced
1 Tbsp lemon juice
1. Combine all ingredients; shape into 12 patties, using about 1/3 cup stuffing mixture for each patty. Refrigerate 10 minutes.
2. Heat a large heavy nonstick skillet on medium heat. Add patties, in batches; cook (6) minutes or until golden brown on both sides, turning carefully after (3) minutes.
Suggestion: Serve with a mixed green salad tossed with your favorite light salad dressing.
OPTIONAL: (Patties can be shaped ahead of time. Refrigerate up to 24 hours before cooking as directed).
Yield: 6 Servings, (12 Patties).
