Healthy Tomato Soup

Healthy Tomato Soup is a delicious and hearty soup recipe made with oven-roasted vegetables, drizzled with olive oil and then simmered on the stove. INGREDIENTS:

2 (14.5 oz) cans diced tomatoes, drained, liquid reserved)

2 cups diced onions
2 garlic cloves, minced
2 tbsp olive oil
4 cups chicken broth
1 cup diced celery
1/2 cup uncooked pearl barley
2 tbsp chopped fresh parsley

DIRECTIONS:

1. Preheat oven to 425° F.

2. Place tomatoes, onions and garlic into a large roasting pan.  Drizzle the olive oil over vegetables and toss to coat.  Roast for 25 minutes.

3. Transfer vegetables to a 3 quart size saucepan.  Stir in the reserved tomato liquid, broth, celery and barley. Bring to a boil.  Reduce heat to low; cover and cook 35 minutes or until barley is tender.  Stir in the parsley.

YIELD: 8 Servings.
Serving Size: 1-1/4 cups per serving.
