Healthy Vegetable Soup

Healthy Vegetable Soup is a delicious recipe for a hearty, meatless vegetable soup. Note: You will need a 5 or 6 quart stockpot for this recipe. Total recipe time is 1-3/4 hours. This recipe is full of vegetables, well-seasoned and uses “V-8 Juice” to bring out more of a  flavor. Ingredients Include: Carrots, onions, celery, bell peppers, cabbage, peas, corn and tomatoes. This is also a low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (3 PointsPlus), (4 SmartPoints) recipe. Makes: (16) servings. Healthy Vegetable Soup will be loved by all of your family, friends and guests.

Prep Time: 25 Minutes.
Cooking Time: 1 Hour-20 Minutes.
Equipment Needed: (5 or 6 quart Stockpot)

INGREDIENTS:healthy-vegetable-soup

1 Tbsp olive oil
8 medium-size carrots, sliced
2 large onions, chopped
4 celery ribs, chopped
1 large green bell pepper,
seeded, pith removed, chopped

1 garlic clove, minced
2 cups chopped cabbage
2 cups frozen cut green beans
2 cups frozen green peas
1 cup frozen whole kernel corn
1 (15 oz) can garbanzo beans, drained, rinsed
1 bay leaf
2 tsp instant chicken bouillon
1-1/2 tsp dried parsley flakes
1 tsp salt
1 tsp dried marjoram
1 tsp dried thyme
1/2 tsp dried basil
1/4 tsp ground black pepper
4 cups water
1 (28 oz) can diced tomatoes, undrained
2 cups Vegetable juice (V-8 or store brand)

DIRECTIONS:

1. In a (5 or 6 quart) stockpot, heat oil over medium-high heat.

2. Add carrots, onions, celery and bell pepper to pot. Saute until crisp-tender.

3. Add in garlic; cook and stir 1 minute. Stir in remaining ingredients; bring to a boil.

4. Reduce heat and simmer, covered, until vegetables are tender, 1 to 1-1/2 hours. (Be sure and remove bay leaf before serving).

Yield: 16 Servings. (4 Quarts total).
Serving Size: 1 Cup.
