Italian Cheese Spread

Italian Cheese Spread is an easy and quick 20 minute recipe for the grill. Great for large gatherings, events and/or summer cookouts. Ingredients: cream cheese, shredded cheese, tomato and pesto all combined and warmed on the grill and served with wheat crackers. This is also a healthy low calories, low fat, low sodium, low carbohydrates, low cholesterol, low sugars, diabetic, vegetarian, heart-healthy and Weight Watchers (5) PointsPlus, (6 SmartPoints) recipe. Makes 12 servings. Italian Cheese Spread will be loitalian-cheese-spreadved by all of your family, friends and guests.

Prep Time: 10 Minutes.
Cooking Time: 10 Minutes.

INGREDIENTS:

1 (8 oz) bar Neufchatel cheese.
1/4 cup pesto
1 Roma tomato, chopped
1/4 cup finely shredded Italian 5 cheese blend
Woven wheat crackers

DIRECTIONS:

1. Preheat grill to medium.

2. Place unwrapped Neufchatel on an 8 inch square sheet of heavy-duty foil or a double layer of regular foil.; top with next 3 ingredients.

3. Place foil on grill; cover with lid. Grill 8 to 10 minutes or until shredded cheese is melted and Neufchatel is softened, but still holding its shape.

4. Transfer the foil to a platter and serve with the crackers.

YIELD: 12 Servings
Serving Size: 2 tbsp spread + 6 crackers per serving.
