Italian Chicken-Noodle Soup

Italian Chicken-Noodle Soup is a stovetop recipe for a delicious and hearty soup. It takes (10) minutes to prepare and (1-1/2) hours to cook. (1 lb) boneless, skinless chicken breasts,
cut into 1/2-inch pieces

1 large onion, chopped
4 celery ribs, sliced
2 medium-size carrots, sliced
4 garlic cloves, minced
2 Tbsp butter or stick margarine
2 Tbsp olive or canola oil
1/4 cup all-purpose flour
1 tsp dried basil, (or more to taste
1/2 tsp dried oregano, (or more to taste)
1/4 tsp ground black pepper
3 (14-1/2 oz) cans chicken broth
1 (14-1/2 oz) can diced tomatoes, undrained
(6 oz) uncooked tricolor corkscrew pasta


1. Place the chicken, onion, celery, carrots and garlic, butter and oil in n a large saucepan or Dutch oven and saute for 5 minutes.

2. Stir in the flour, basil, oregano and black pepper until blended.

3. Gradually add in the broth and tomatoes. Bring to a boil.

4. Reduce heat; cover and simmer for 1 hour. Taste and adjust spices to taste if desired. Return to a boil and stir in the pasta.

5. Reduce heat; simmer uncovered for 12-15 minutes or until pasta is tender.

Yield: 9 servings.
