Italian Sausage Soup

Italian Sausage Soup is a quick (1) Hour recipe for a delicious and hearty soup made with both sweet and hot Italian turkey sausage, white potatoes, celery, black olives, zucchini, onion, tomatoes and garlic. It is well-seasoned and cooked on the stovetop. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (4 PointsPlus), (4 SmartPoints) recipe. INGREDIENTS:

(8 oz) hot Italian turkey sausage (casings removed)
(8 oz) sweet Italian turkey sausage (casings removed)
5 cups water
3 large white potatoes, cut into 1/2″ cubes
3 celery ribs, sliced
1 small zucchini, sliced
1 medium-size onion, chopped
1 (28 oz) can whole tomatoes,
(drained & chopped, juices reserved)

1 (15 oz) can kidney beans, undrained
3/4 cup sliced black Olives
2 garlic cloves, minced
1 tsp anise seed
1/2 tsp freshly ground pepper

DIRECTIONS:

1. Cook sausages in a Dutch oven over medium heat, breaking them up into small pieces with a wooden spoon, until browned and cooked through, about 6 minutes. Drain off fat.

2. Stir in the water, potatoes, celery, zucchini, onion, tomatoes with the reserved juice, beans, olives, garlic, anise seed and black pepper. Bring to a boil. Reduce heat to low, cover and simmer until vegetables are tender.(About 30 minutes).

Yield: 12 Servings.
