Italian Sausage Soup
Italian Sausage Soup is a delicious and hearty soup made with both sweet and hot Italian turkey sausage, white potatoes, celery, black olives, zucchini, onion, tomatoes and garlic. It is seasoned well and cooked on the stovetop. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (4 PointsPlus), (4 SmartPoints) recipe. Makes 12 servings with a (1-3/4 cup) serving size. Italian Sausage Soup will be loved by all of your family, friends and guests.
(8 oz) hot Italian turkey sausage (casings removed)
(8 oz) sweet Italian turkey sausage (casings removed)
5 cups water
3 large white potatoes, cut into 1/2″ cubes
3 celery ribs, sliced
1 small zucchini, sliced
1 medium-size onion, chopped
1 (28 oz) can whole tomatoes,
(drained & chopped, juices reserved)
1 (15 oz) can kidney beans, undrained
3/4 cup sliced black Olives
2 garlic cloves, minced
1 tsp anise seed
1/2 tsp freshly ground pepper
1. Cook sausages in a Dutch oven over medium heat, breaking them up into small pieces with a wooden spoon, until browned and cooked through, about 6 minutes. Drain off fat.
2. Stir in the water, potatoes, celery, zucchini, onion, tomatoes with the reserved juice, beans, olives, garlic, anise seed and black pepper. Bring to a boil. Reduce heat to low, cover and simmer until vegetables are tender.(About 30 minutes).
Yield: 12 Servings.
