Italian Vegetable-Cheese Appetizer

Italian Vegetable-Cheese Appetizer is an easy, quick (30) minute recipe for large gatherings and holidays such as: Christmas, Thanksgiving, Easter and large game day crowds. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, diabetic-friendly, heart-healthy and Weight Watchers (4 PointsPlus) (5 SmartPoints) recipe. Ingredients include: Bell peppers, onions, tomato, eggplant and zucchini, topped with Mozzarella cheese. Makes: (40) Servings. 1 small eggplant, chopped
1 cup chopped onions
1 cup chopped red bell peppers
2 garlic cloves, minced
1/4 cup sun dried tomato vinaigrette salad dressing
1 zucchini, chopped
1 large tomato, chopped
1/4 cup grated Parmesan cheese
1/2 cup shredded low-moisture part-skim Mozzarella cheese
Serve with Multi-grain toasted chips or with your favorite variety of woven wheat crackers.


1. Cook and stir the eggplant, onions, peppers and garlic in the salad dressing in a large skillet over medium heat 8 minutes.

2. Stir in the zucchini and tomatoes; cover. Simmer 5 to 7 minutes or until tender. Stir in the Parmesan cheese.

3. Spoon into a serving bowl. Sprinkle with Mozzarella cheese. Serve with the chips and/or wheat crackers.

YIELD: 5 cups dip or 40 servings.
Serving Size: 2 Tbsp. dip and 15 chips per serving..
