Lemon-Dill Salad

Lemon-Dill Salad is an easy and quick (10) minute recipe for a side salad. Radicchio, romaine lettuce and scallions are combined and tossed with a fresh dill, olive oil and lemon juice dressing. This is a very flavorful chopped salad that is also a healthy, low calories, low fat, low saturated fat, low carbohydrates, low sodium, low cholesterol, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (4 SmartPoints), (3 PointsPlus) recipe. 5 cups shredded romaine lettuce (about 1 head)
2 cups shredded radicchio (1/2 head)
2 scallions, chopped

3 Tbsp. olive oil
2 Tbsp. lemon juice
1 Tbsp. fresh dill, or 1 tsp. dried
Salt and freshly ground black pepper, to taste


1. In a large bowl toss together the romaine, radicchio, and scallions.

2. For the Dressing: In a small bowl, whisk together the olive oil, lemon juice, dill, salt and black pepper.

3. Pour the dressing onto the salad and toss to coat. Divide into 4 equal sized servings.

Yield: 4 Servings.
