Lentil-Sausage Soup is an easy, delicious and hearty recipe for a slow cooker soup. Ingredients include: Spicy chicken sausage links, onion, carrots, lentils, garlic and celery. Just cut up the vegetables and throw everything in the slow cooker. NOTE: The (8) hours of waiting for it to cook will be your most difficult part!. 1 carton (32 ounces) reduced-sodium chicken broth
1 can (28 ounces) diced tomatoes, undrained
3 (3 oz each) fully cooked,
spicy chicken sausage links, sliced (1/2″ thick)
1 cup dried lentils, rinsed
1 medium-size onion, chopped
1 medium-size carrot, chopped
1 celery rib, chopped
2 garlic cloves, minced
1/2 tsp dried thyme
1. In a 4 or 5 quart slow cooker, combine all ingredients. Cover and cook on LOW 8-10 hours or until lentils are tender.
Yield: 6 Servings.
