Macaroni Coleslaw

Macaroni Coleslaw is an easy and delicious recipe for a large gathering. It takes only 25 minutes to assemble and a refrigeration time of at least 1 hour before serving. Ingredients include: Macaroni, packaged slaw mix, onions, bell pepper, celery, cucumbers and water chestnuts. All ingredients are combined together with a made from scratch dressing, included. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (4 PointsPlus), (6 SmartPoints) recipe. 1 (7 oz) pkg. ring macaroni or ditalini
1 (14 oz) bag coleslaw mix
2 medium-size onions, finely chopped
2 celery ribs, finely chopped
1 medium-size cucumber, finely chopped
1 medium-size green bell pepper, finely chopped
1 (8 oz) can whole water chestnuts, drained, chopped


1-1/2 cups Miracle Whip Light
1/3 cup sugar
1/4 cup cider vinegar
1/2 tsp salt
1/4 teaspoon ground black pepper


1. Cook macaroni according to package directions; drain and rinse in cold water. Transfer to a large bowl; add in coleslaw mix, onions, celery, cucumber, bell pepper and water chestnuts.

2. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for at least 1 hour.

Yield: 16 Servings.
