Nonstick cooking spray
3 tbsp crushed graham crackers
2/3 cup boiling water
1 (0.3 oz) box sugar-free lemon gelatin
1 cup 2% low-fat cottage cheese
1 (8 oz) bar fat-free cream cheese
2 cups thawed, fat-free whipped topping


1. Sprinkle half the crumbs onto the side of an 8 or 9 inch springform pan or pie plate sprayed with cooking spray.

2. Add boiling water to gelatin mix in a small bowl; stir 2 minutes, until completely dissolved. Cool 5 minutes. Blend gelatin mixture and cheeses together in a blender until smooth, occasionally scraping down side of blender container. Pour into a large bowl. Gently stir in the whipped topping.

3. Pour into prepared pan; smooth out the top. Sprinkle remaining crumbs around outside edge. Refrigerate 4 hours or until set. Remove side of pan just before serving.

YIELD: 8 Servings.
