Oven-Roasted Beets

Oven-Roasted Beets is a delicious and easy side dish recipe for a large crowd or event. It would make a good option for your holiday meal menus. Fresh beets and carrots seasoned with ginger and Catalina salad dressing make up this easy to assemble recipe. 4 fresh beets, greens cut off
6 carrots, peeled, cut diagonally into 3/4″ thick slices
2 tsp olive oil
1/2 cup oil-base Catalina salad dressing
2 tsp ground ginger


1. Preheat oven to 425° F.

2. Wrap beets individually in foil; place in a shallow pan. Toss carrots with oil in a large shallow baking dish. Bake beets 1 hour 15 minutes. Add the baking dish of carrots to oven after beets have cooked for 45 minutes.

3. Unwrap beets; remove and discard skins and stems. Cut each beet into 8 wedges. Add to carrots with combined dressing and ginger; toss to coat.

4. Bake 15 minutes or until vegetables are tender.

YIELD: 10 Servings.
Serving Size: 3/4 cup per serving.
