Pecan Cookies

Pecan Cookies is an easy and quick recipe for delicious cookies similar to the famous “Pecan Sandies” The difference is that these are healthier. They are a low calories, low fat, low cholesterol, low sodium, No-Sugars, low carbohydrates, heart-healthy, diabetic, Weight Watchers (2) PointsPlus and (3 SmartPoints) recipe. Makes 42 cookies. Prep Time: 10 Minutes.
Cooking Time: 20 Minutes.

INGREDIENTS:

1 cup butter, softened
1/4 cup granulated no-calorie sweetener
2 cups all-purpose flour
2 tsp vanilla extract
1 cup chopped pecans

2 tbsp granulated no-calorie sweetener
2 tsp cornstarch

DIRECTIONS:

1. Preheat oven to 350º F.

2. Beat together the butter and 1/4 cup sweetener at medium speed with an electric mixer about 2 minutes or until creamy. Gradually add flour beating at low speed until blended. Stir in vanilla and pecans. Shape into 1″ balls.

3. Bake 20 minutes; remove from oven and place on wire racks to cool.

4. Process the 2 tbsp sweetener and cornstarch in a blender or food processor; roll cookies in processed sweetener mixture.

YIELD: 42 servings.
Serving Size: 1 cookie per serving.
