Pork-Dumplings Stew

Pork-Dumplings Stew is an easy and delicious slow cooker  recipe which is also healthy. Pork tenderloin, carrots, celery, onions, chicken broth and chives make up the stew. The dumplings are made with a boxed stuffing mix. It is also a healthy, low calories, low fat, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (9 SmartPoints), (8 PointsPlus) recipe. INGREDIENTS:

(2 lb) Pork tenderloin, cut into 1″ pieces
2 large carrots, peeled, cut into 3/4″ pieces
2 celery ribs, cut into bite-size pieces
2 medium-size onions, chopped
2-1/2 cups fat-free, reduced-sodium chicken broth
2 bay leaves
2 eggs
1 (6 oz) box, stuffing mix for pork
1 cup warm water
1 (8 oz) tub chive & onion cream cheese spread
1/4 cup chopped fresh chives

DIRECTIONS:

1. Combine first 6 ingredients in slow cooker; cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 4 hours). Discard bay leaves.

2. Mix eggs, stuffing mix and water together; shape into 8 balls. Add cream cheese spread to slow cooker; stir until melted. Gently stir in stuffing balls; cook, covered, on HIGH 30 minutes.

3. Turn off slow cooker. Let stand 15 minutes Serve stew and dumplings topped with chives.

YIELD: 8 Servings.
Serving Size: 1-1/2 cups per serving.
