Puffed Apple Pancake

Puffed Apple Pancake is an easy recipe for an oven-baked pancake. Serve it for breakfast or brunch. It takes a total time of (40) minutes to make this tasty dish. 2 Tbsp margarine, divided
3 Granny Smith apples, (1 lb), thinly sliced
1/2 cup shredded 2% Cheddar cheese
(1 oz) Neufchatel cheese, softened
1/2 cup skim milk
1/2 cup flour
3/4 cup cholesterol-free egg product
1/4 cup granulated no-calorie sweetener, divided
1/8 tsp salt
1/2 tsp ground cinnamon


1. Preheat oven to 475°F.

2. Melt 1 Tbsp of the margarine in a large ovenproof skillet over medium heat. Add in the apples and cook for 5 minutes or until crisp-tender, stirring frequently. Top with the Cheddar cheese.

3. Whisk the Neufchatel and milk together in a medium-size bowl until blended. Stir in flour, egg product, 1 Tbsp of sweetener and salt; pour over the apples.

4.  Combine together the cinnamon with remaining sweetener and sprinkle over top of pancake. Dot with remaining margarine.

5. Bake 12-15 minutes or until puffed and golden brown.

6. Cut into (6) equal-sized wedges; serve immediately while hot.

Yield: (6) servings.
