Quick Cheesy Squash

Quick Cheesy Squash is a delicious recipe for a baked spaghetti squash side dish. A possible option for large gatherings and holidays. It takes about (30) minutes total time start to finish and cooked in the microwave. A perfect option for the warm months, so as not to heat up the house. Summary-The squash is baked in the microwave and then filled with Parmesan cheese, Mozzarella cheese, tomatoes and parsley, then heated again. It is also a healthy, low fat, low calories, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (1 PointsPlus), (2 SmartPoints) recipe. INGREDIENTS:

1 spaghetti squash (about 3 lb.)
2 Tbsp grated reduced-fat Parmesan cheese
1/2 cup shredded 2% Mozzarella cheese
2 Roma tomatoes, finely chopped
1/4 cup chopped fresh parsley



DIRECTIONS:

1. Pierce Squash several times with a fork or sharp knife to allow steam to escape. Microwave on HIGH 10 minutes or just until squash is softened, turning after 5 minutes. Let stand 5 minutes.

2. Cut squash in half, lengthwise; remove and discard seeds. Use fork to scrape insides of squash to form strands; place in a large bowl. Add remaining ingredients; toss lightly with fork. Spoon into 1 squash shell; discard remaining shell.

3. Microwave for 2 minutes or until heated through.

YIELD: 10 Servings.
