(1-1/2 lbs) boneless, skinless, chicken breasts
1 tbsp extra-virgin olive oil
2 cups diced leek, white and light green parts only,
(wash well before dicing)

1/2 tsp salt
5 tbsp all-purpose flour
1 (14 oz) can reduced-sodium chicken broth
1 cup 2% milk
2 tbsp dry sherry
1/2 tsp dried thyme
1/2 tsp freshly ground black pepper

Remove from heat and stir in the mayonnaise mustard and 1/2 cup of the Parmesan.

4. Spread half the broccoli mixture into the prepared baking dish. Top with the chicken, then the remaining broccoli mixture. Sprinkle evenly with the remaining 1/2 cup Parmesan. Bake until bubbly (20 to 25 minutes). Let cool 10 minutes before serving.
