Quick Chicken-Vegetable Soup

Quick Chicken-Vegetable Soup is a “30 Minute recipe”. Only 10 minutes of cooking time. It is also a delicious, easy and healthy, low calories, low fat, low cholesterol, low sugars, low carbohydrates, diabetic and Weight Watchers (3) PointsPlus, (3 SmartPoints) recipe. Chicken, cut up vegetables, chicken broth and white rice are the main ingredients for this hearty and healthy soup. Makes 5 servings. Cooking Time: 10 Minutes.
Total Time: 30 Minutes.


(8 oz)  boneless, skinless chicken breasts, cut in bite-size pieces
1 tsp cooking oil
1 (14.5 oz) can fat-free, low-sodium chicken broth
1-1/2 cups water
2 cups mixed fresh vegetables (broccoli florets,
chopped red peppers, sliced carrots) {see note below}

1 (0.7 oz) envelope dry Italian dressing mix
1/2 cup uncooked instant white rice
2 tbsp chopped fresh parsley

Substitute 1 (10 oz) box frozen mixed vegetables for the cut-up fresh vegetables.


1. Cook and stir chicken in the hot oil in a large saucepan over medium-high heat 5 minutes or until done.

2. Add in broth, water, vegetables and dressing mix; stir. Bring to a boil; cover and simmer over low heat 5 minutes.

3. Stir in rice and parsley. Remove from heat. Let stand, covered, 5 minutes.

YIELD: 5 Servings.
Serving Size: 1 cup per serving.
