Quick Chicken-Wraps

Quick Chicken-Wraps is a (30) minute, (chicken salad in a tortilla), recipe which works well for any leftover chicken you might have on hand. Summary: Celery, cooked chicken, green onions, dried cranberries, lettuce, walnuts, yogurt and mayonnaise are well-seasoned and wrapped in a flour tortilla. Use it as a light lunch or dinner. This is also a low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (6 SmartPoints), (5 PointsPlus) recipe. INGREDIENTS:

1/3 cup finely chopped celery
1/4 cup chopped, cooked chicken
1 Tbsp toasted walnuts, chopped
1 green onion, finely chopped
1Tbsp dried cranberries
1 Tbsp Greek plain yogurt
1 Tbsp light-mayonnaise
Salt, to taste
Ground black pepper, to taste
1 (10″) flour tortilla
Boston lettuce leaves

DIRECTIONS:

1. In a medium-size bowl, combine together the celery, chicken, walnuts, green onion, cranberries, yogurt and mayonnaise. Season to taste with salt and pepper.

2. Line the tortilla with the lettuce leaves and top with the chicken salad. Roll up tortilla and cut in half to serve.

Yield: 2 Servings.
Serving Size: 1/2 of recipe per serving.
