Quick Italian Chicken

Quick Italian Chicken is a delicious meal recipe for any day of the year and it’s all cooked in a skillet. It takes less than (1) hour total time. Ingredients Include: Boneless chicken, red, green and yellow bell peppers, prosciutto, tomatoes and garlic. It is well-seasoned with basil, oregano and black pepper. This is also a healthy, low calories, low fat, low sodium, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (7 SmartPoints), (8 PointsPlus) recipe. Makes: (4) servings. 4 (6 oz) boneless, skinless chicken breast halves
1/4 tsp ground black pepper
2 Tbsp olive oil
1 each medium-size green bell pepper, red bell pepper and
yellow bell pepper, julienned

2 thin slices prosciutto or deli ham, chopped
2 garlic cloves, minced
1 (14.5 oz) can diced tomatoes, undrained
1/4 cup low-sodium chicken broth
2 Tbsp minced fresh basil or 2 tsp dried basil
1 tsp minced fresh oregano or 1/4 tsp dried oregano


1. Sprinkle chicken with black pepper. In a large non-stick skillet, brown chicken in the oil. Remove chicken and keep warm.

2. In the same skillet, saute the peppers and prosciutto or ham until peppers are tender. Add in garlic and cook 1 minute longer.

3. Add in the tomatoes, broth, basil, oregano and chicken. Bring to a boil. Reduce heat.

4. Cover and simmer for 12-15 minutes or until a meat thermometer inserted in chicken reads 170° F.

Yield: 4 Servings.
Serving Size: 1 Piece of chicken + 1 cup vegetable mixture.
