Quick Tex-Mex Salad

Quick Tex-Mex Salad is a delicious 10 minute recipe for a dinner salad. A great option for Cinco de Mayo and any other day you need a quick and spicy light meal. It is made with avocados, black beans, red onions, cherry tomatoes, cheese and bell peppers. INGREDIENTS:

1/3 cup Italian salad dressing
1-1/4 tsp ground cumin
1 (15 oz) can black beans, drained, rinsed
2 avocados, chopped
2 cups halved cherry tomatoes
1 yellow bell pepper, chopped
1/2 cup chopped red onions
1/2 cup Mexican-style finely shredded four cheese blend

DIRECTIONS:

1. Mix together the salad dressing and cumin.

2. Combine remaining ingredients together in a large bowl. Add the dressing mixture; mix lightly. Serve immediately.

YIELD: 6 Servings.
