Quick Tortellini Soup

Quick Tortellini Soup is a quick (35) minute recipe for a delicious Italian-style Spring soup. Made with Italian sausage, cheese tortellini, onions, green peas and broccolini and it is well-seasoned with thyme. (12 oz) Italian chicken sausage links, sliced
1 Tbsp olive oil
8 cups low-sodium chicken broth
(12 oz) fresh broccolini, trimmed and chopped
1 (9 oz) package refrigerated cheese-filled tortellini
1 cup fresh or frozen green peas
2 green onions, sliced
1 tsp dried thyme, crushed

New to broccolini? It is available in large supermarkets, it’s a cross between broccoli and Chinese kale. It has longer, thinner stalks than broccoli and a more delicate texture. If you can’t find it, use regular broccoli.


1. In a 4 to 6 quart  size saucepan, brown the sausage olive oil over medium heat. Add in broth and  bring to a boil.

2. Add in the tortellini and thyme; cook 2 minutes.

3. Add remaining ingredients and cook another 3 to 5 minutes or until tortellini is done and broccolini is just tender.

Yield: 6 Servings.
Serving Size: About 1-3/4 cups per serving.
