Roast Beef Meal

Roast Beef Meal is a delicious and easy to prepare slow cooker recipe for a hearty, week night dinner. It takes only 20 minutes to prepare and (5 to 8 hours) in the slow cooker. (This recipe requires a (4-1/2 to 5-1/2 quart slow cooker). Ingredients include: Beef, zucchini, onions, bell peppers, garlic and Italian dressing mix. This is also a healthy, low calories, low fat, low sodium, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (5 SmartPoints), (5 PointsPlus) recipe. Makes: (8) servings. Prep Time: 20-25 Minutes.

2 large onions, cut into 8 wedges each
2 garlic cloves, peeled
2 tsp Italian salad dressing mix
(2 lb) boneless beef chuck roast
2 medium-size red bell peppers, cut in 1/2″ pieces
1/2 cup + 2 Tbsp cold water, divided
2 medium-size zucchini, sliced 1/4″ thick
2-1/2 Tbsp cornstarch


1. Place onions and garlic in a (4-1/2 to 5-1/2) quart slow cooker. Press Italian salad dressing mix evenly onto all surfaces of roast. Place roast in slow cooker. Add bell peppers and the 1/2 cup water to slow cooker.

2. Cover and cook on HIGH 5 hours or on LOW 8 hours.

3. Add in zucchini and continue to cook, covered, 30 minutes or until zucchini is fork-tender. Remove roast and vegetables. Strain cooking liquid and reserve liquid, skimming fat from liquid.

4.  Dissolve cornstarch into the 2 tablespoons water. Combine 2 cups reserved cooking liquid and cornstarch mixture in a medium-size pan. Bring to a boil, stirring constantly. Cook and stir 1 minute or until thickened. Serve the gravy over the roast and vegetables.

Yield: 8 Servings.
