1 cup reduced-fat sour cream
2 Tbsp taco seasoning mix
1 fully ripe avocado, divided
1 (8 oz) bar Neufchatel cheese, softened
3 tbsp thick & chunky style salsa
1 small tomato, chopped
3/4 cup shredded 2% Cheddar cheese
2 green onions, sliced
1. Mix sour cream and seasoning mix until blended. Mash half the avocado; mix with Neufchatel until blended. Spread onto bottom of pie plate; cover with sour cream mixture.
2. Chop remaining avocado; toss with salsa. Spread over sour cream mixture; cover with remaining ingredients.
3. Refrigerate at least 3 hours or until chilled before serving.
Yield: 32 servings.
