Slow Cooker Beef Stew
Slow Cooker Beef Stew is a delicious recipe for a hearty, beef vegetable stew. Vegetables: Onion, green peas, potatoes, celery and carrots. It is well seasoned and tossed in the slow cooker for 6-1/2 to 8 hours. This is also a healthy, low calories, low fat, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (7 PointsPlus), (9 SmartPoints) recipe. 1-1/2 lbs beef stew meat
3 medium-size potatoes, peeled and cubed
3 cups water
1-1/2 cups fresh baby carrots
1 (10-3/4 oz) can condensed tomato soup, undiluted
1 medium-size onion, chopped
1 celery rib, chopped
2 Tbsp Worcestershire sauce
1 Tbsp browning sauce, optional
2 tsp beef bouillon granules
1 garlic clove, minced
1 tsp granulated sugar
3/4 tsp salt
1 tsp ground black pepper
1/3 cup cornstarch
3/4 cup cold water
2 cups frozen peas, thawed
1. Place the meat, potatoes, water, carrots, soup, onion, celery, Worcestershire sauce, browning sauce if desired, bouillon granules, garlic, sugar, salt and pepper in a (5 or 6) quart slow cooker. Cover and cook on LOW for 6-8 hours or until meat is tender.
2. Combine cornstarch and cold water in a small bowl until smooth; gradually stir into stew. Stir in peas. Cover and cook on HIGH for 30 minutes or until thickened.
Yield: 8 Servings.
