Slow Cooker Chicken-Rice Soup

Slow Cooker Chicken-Rice soup is an easy recipe for a spicy and hearty soup. This recipe requires a (3-1/2 Quart) slow cooker. Ingredients include: Boneless chicken, wild-rice, white rice, chicken broth, celery and onions which is seasoned with crushed red pepper and thyme. There is only (10) minutes of prep time for this simple to make soup. INGREDIENTS:

(1 lb) Skinless, boneless chicken breast halves (about 4 breast halves), cut into cubes
1/2 cup uncooked wild rice
1/2 cup uncooked white long-grain white rice
1 Tbsp vegetable oil
5-1/4 cups orgainic chicken broth
2 tsp dried thyme leaves, crushed
1/4 tsp crushed red pepper
2 celery ribs, coarsley chopped, (about 1 cup)
1/2 cup chopped onion
1/2 cup sour cream, optional
1/4 cup chopped green onions, optional

DIRECTIONS:

1. Stir wild rice, white rice and oil into a (3-1/2-quart) slow cooker. Cover and cook on HIGH 15 minutes.

2. Stir the broth, thyme, red pepper, celery, onion and chicken into the cooker. Reduce heat to LOW.
Cover and cook 7 to 8 hours or until chicken is cooked through.

3. Serve with the sour cream and green onions, if desired.

Yield: 8 Servings.
Serving Size: 1/8 of recipe.
