Sparkling Peach-Lemonade

Sparkling Peach-Lemonade is an easy, delicious and refreshing recipe for the hot summer days. Made with fresh peaches, mint leaves and freshly squeezed lemon juice then combined with seltzer water. Makes 10 servings. This is also a healthy, low calories, low fat, low cholesterol, low carbohydrates, low sodium, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (2 SmartPoints), (1 PointsPlus) per serving recipe. Sparkling Peach-Lemonade will be loved by all of your family, friends and guests.

Prep Time: About 20 Minutes.
Cooking Time: 5 Minutes.
Total Time: About 1 Hour.

INGREDIENTS:

1-1/2 cups fresh lemon juice (About 15 lemons)
1 cup granulated no-calorie sweetener
1 cup water
About 3 peaches, thinly sliced (you will need 40 peach slices).
1 bunch mint leaves
10 cups seltzer water

DIRECTIONS:

1. Heat lemon juice, sweetener, water and peaches in a medium sized saucepan. Simmer for 4-5 minutes, turn off heat, and allow to cool for 30 minutes.

2. Drain mixture into a container and set aside. Reserve peaches.

3. Muddle 5-6 mint leaves and one slice of peach in the bottom of a glass. Fill the glass with ice. Add 3 peach slices and 1/4 cup lemonade mixture.

NOTE: (“Muddle”, means: To press into the bottom of a glass with either a muddler, pestil or the back of a spoon against the side of a glass; to mash).

4. Top each glass with 3/4 cup seltzer water and stir.

Yield: 10 Servings.
Serving Size: 8 oz per serving.
