INGREDIENTS:

6 Tbsp grated Parmesan cheese
1/3 cup canola mayonnaise
3 Tbsp fresh lemon juice
2 Tbsp water
1 tsp Dijon mustard
1/2 tsp freshly ground black pepper
4 cups baby spinach leaves
4 cups baby arugula leaves
3/4 cup matchstick-cut or shredded turnips, divided

DIRECTIONS:

1. Combine half of Parmesan, mayonnaise, lemon juice, water, mustard and black pepper in a large bowl; stir until well blended.

2. Add in the spinach, arugula and half of turnips; toss to coat.

3. Sprinkle with remaining cheese and turnips.

Yield: 6 servings.
Serving Size: 1-1/3 cups per serving.
