Sweet Potato Casserole

Equipment Needed: 5-6 Quart Slow Cooker
Prep Time: 20 Minutes.
Cooking Time: 3 Hours.
Total Time: 3Hours-20 Minutes.

(3 lbs) sweet potatoes, peeled, diced (1/2″)
2 Tbsp light brown sugar
3 Tbsp melted butter
1 tsp vanilla extract
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup miniature marshmallows
1/2 cup toasted chopped pecans


1. Place sweet potatoes, brown sugar, butter, vanilla, salt, pepper, cinnamon and nutmeg in a 5- to 6-quart slow cooker. Stir to coat. Cook on High for 3 hours.

2. Transfer to a serving dish. Top with marshmallows and pecans. (The heat from the sweet potatoes will partially melt the marshmallows).

Yield: 12 Servings.
