Tex-Mex Chicken Saute

Tex-Mex Chicken Saute is a delicious recipe for a Southwestern-style meal. It takes only (35) minutes to make this well-seasoned and flavorful dish. 2 tsp chili powder
1 tsp ground cumin
1 Tbsp vegetable oil
6 (4-5 oz) boneless, skinless chicken breast halves (About 2 lbs)
1 tsp minced garlic
4 green onions, minced (about 1/2 cup)
1 (10.75 oz)can Condensed Healthy Request® Tomato Soup
1/2 cup picante sauce
1/2 cup water
1 (15 oz) can low-sodium black beans, rinsed, drained
1 cup frozen whole kernel corn
2 Tbsp chopped fresh cilantro
Hot cooked brown rice, optional


1. Stir the chili powder and cumin together in a small bowl. Season chicken with chili powder mixture.

2. Heat oil in a 12″ skillet over medium-high heat. Add in chicken and cook 6 minutes or until browned on both sides. Add in the garlic and onions; cook and stir for 1 minute.

3. Add in soup, picante sauce and water; bring to a boil. Reduce heat to medium-low. Add in beans and corn. Cover and cook 15 minutes or until chicken is cooked through. Sprinkle with cilantro. (Serve chicken and sauce over the brown rice if using).

Yield: 6 Servings.
