1 (10 oz) bag baby spinach leaves, washed
2 medium-size carrots, chopped
2 medium-size celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
4 cups low sodium vegetable broth
1 (28 oz) can diced tomatoes, undrained
2 bay leaves
1 tbsp dried basil
1 tsp dried oregano
1⁄2 tsp crushed red pepper
1. Place all ingredients into slow cooker. Cover and cook on HIGH 5 hours or LOW 8-10 Hours.
2. Remove bay leaves and serve.
Yield: 8 servings.
