Turkey-Wild Rice Soup

Turkey-Wild Rice Soup is a recipe for a hearty cream of turkey or chicken soup. It’s a good way to use up some of your leftover holiday turkey as it calls for cooked turkey or chicken and takes about (2) hours total time to prepare and cook. Ingredients Include: chopped turkey or chicken, mushrooms, celery, carrots, wild rice, chicken broth and sour cream. It is also well-seasoned. 1 Tbsp extra-virgin olive oil
2 cups sliced mushrooms
3/4 cup chopped celery
3/4 cup chopped carrots
1/4 cup chopped shallots
1/4 cup all-purpose flour
1/4 tsp salt
1/4 tsp freshly ground black pepper
4 cups low-sodium chicken broth
1 cup quick-cooking or instant wild rice
3 cups shredded cooked chicken, or turkey
1/2 cup light sour cream
2 Tbsp chopped fresh parsley


1. Heat olive oil in a large saucepan over medium heat. Add in mushrooms, celery, carrots and shallots. Cook, stirring until softened, about 5 minutes. Add in flour, salt and pepper. Cook, stirring for 2 minutes more.

2. Add in broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, 5 to 7 minutes. Stir in turkey (or chicken), sour cream and parsley. Cook until heated through, about 2 minutes more.

Yield: 4 Servings.
Serving Size: 1-3/4 cups per serving.
